I would say they're not RPGs because there is no method of advancement. Your character is as strong in the beginning as in the end. Power ups are temporary at best.

EDIT: Also, I think I've found the reason why games like Zelda and Metroid are not RPGs.
I want to discuss this further so I am withholding said information until I hear a good reason as to why they are not.
It's all really silly too I think, but makes sense if you consider the source of modern RPGs.
Zelda is an action game (that hacking and shooting and bombs) and an adventure game (has a story and characters with personalities). That makes it an action-adventure game. You're telling me to prove it isn't an RPG by what? Listing 50 rpgs and pointing out the differences? I'm not doing that. That's a waste of my time. It's an action-adventure game, case closed.
