IT NEEDS TO BE BLEEDING ON THE PLATE PEOPLE

This. Also, another one of my biggest pet peeves is when people put condiments on their food without even trying it or asking for condiments at a high class restaurant, since I feel those are the biggest insults you can ever give to a chef. I'll straight up refuse to serve people at my yearly get-togethers if they pull that shit with me.

Back when I was a Chef, one of the first things they told us was to compensate for people using seasoning and condiments on the table.

We aren't talking about some faceless customer at a table. If I make something especially for you, at least take a bite before you slather it in ketchup or mayonnaise.

If someone puts a lot of effort into some high quality food, it shouldn't even need condiments. I can't remember the last time I ever went to a top notch restaurant and ever even seen condiments on the table.

Or people do whatever the fuck they want/like/tickles their fancy, you probably have yours and should consider that.

(agreed on condiments though)

Dog meat in chinese food container this morning, needed more tarragon. This kitchen is afraid of me. I have seen its true face. The streets are extended gutters and the gutters are full of mayo and when the drains finally congeal over, all the vermicelli will drown. The accumulated filth of all their salt and ketchup will foam up about their waists and all the waitresses and line chefs will look up and shout "Cook for us!"... and I'll whisper "no."

Some people like their salt. I don't give a shit how perfect you think your cooking is, if I want to change it, I'm the one paying the goddamn check.

I like hot sauces but when I have some spicy stuff for dinner, my morning commute turns into a game of where can I find a bathroom so I don't shit myself.

All I ask is that people try the food first. If it isn't to your liking, you can pour whatever the shit you want on it.

EDIT: I had a friend who went up to a fancy steakhouse in NYC once. The guy at the table next to him asked for A1 before even touching his steak and my friend said the head chef came out from the kitchen and kicked the customer out of his restaurant. Really wish I was there for that.

Go to a higher quality steakhouse to get something rare. The last time I ordered a steak at a generic steakhouse (I think it was Longhorn) it came out ice cold and purple.

My parent's friend Wendy is one of those obnoxious people who knows nothing about food. On their last cruise she instructed the waiter to have the chef make her steak well-done with "no seasoning, no salt, no sauce, etc... Just the meat." When she got it she complained that it was dry and bland... DUH.
