I think the issue at work is more subconscious. People treat people differently based on race even not realizing it; it's the first thing they notice, it forms part of their image of an individual's person.
Society's messages and values about race are conflicted, so people tend to have these horrible brambles of guilt and repressed drives; this is uncomfortable, so people try to push colored people from view, or dismiss them, even not so realizing.
I think there's a physiological element to it - humans are probably xenophobic by design.
And, honestly, I truly believe that it's probable that there's something in black physiology which makes them have different tastes than other races. I can't think of any other reason these people go to such extraordinary lengths for particular kinds of food. I don't believe "acquired taste" is a sufficient explanation.
