Made a pizza at work with artichoke hearts, beer-caramelized onions, grilled cajun chicken, roasted tomatoes, and this idea I saw on No Reservations where some dude cooked his pizza then put a fuckton of spinach on it and put it back in the pizza oven, letting it char.

Fucking amazing.

There are people where I currently work who are amazed that you can put a little water on a flat grill and put a lid over it to steam vegetables, I'd hate to see the brainsplosion that would result from telling them new oven ideas.

Pork Belly cured in a salt and molasses cure. Seared then braised in a sake and green tea liquid with chunks of fresh ginger. Researed it for crisp after 4 hours in the oven braising. Made a green tea and soy sauce reduction to serve it with. Nomnomnomnom.

I've decided that I'm going to start working on some charcuterie and create the perfect brat and kraut.

How to make German food -

Step 1: Slaughter an animal.
Step 2: Grind it up.
Step 3: Add other dead things, vegetables and/or spices.
Step 4: Don your lederhosen.
Step 5: Get fat because it's so good.

How to make French food -

Step 1: Make dough.
Step 2: Braid said dough like you do you with your mothers hair.
Step 3: Bake.
Step 4: Surrender.
Step 5: Wash down dry bread with wine, or better yet, beer... from Germany.
