Started curing another 5# of pork belly tonight, ehehehe. Going to cook part of it like I did tonight, and going to make bacon out of the rest.

I've never had Iberico ham but that's pretty steep, considering prosciutto and sopressata are probably the best pork products on the planet.

EDIT:
The ranking is:
1) Bratwurst
2) Prosciutto
3) North Carolina Pulled Pork
4) Bacon
5) Sopressata
6) Italian Sausages

I've been living off of like...$20 every two weeks for food. I am finding out things like just how far you can stretch a $6 Wal*Mart chicken. First I have some roast chicken, the next day I make some chicken and pasta, then I have some chicken salad, after which I make some stock from the bones, then I have soup one day and chicken and dumplings the next.

When I have extra cash, I go to the liquor store and buy a bottle of bottom shelf rum (not the spiced type, and preferably the darkest thing they have), pick up some Creme of Coconut, and the cheapest pineapple (fresh or canned) that I can find so I can spend a night blending Pina Coladas until I'm too drunk to push the buttons on the blender. I can generally get a large bottle of liquor and the other stuff for around $25.

Also, NC BBQ is entirely different from the rest of the country's terribly wrong idea of what pulled pork should be. Instead of using tomatoes as a base for their sauce, the people in NC got the miraculous idea to base the sauce with cider vinegar.

If you ever see a place with NC BBQ on the menu, I'd say try it, especially since I've only seen it at one place in Cincinnati and it was entirely unheard of in Cleveland.
