Not liking bearnaise means you don't like food. Go hang out in fantasyland with Zaryi, I'll be enjoying things that are delicious.

The two people who actually know how hollandaise sauces are kept in a busy kitchen refuse to eat them. Coincidence?

Probably because Hollandaise shouldn't be "kept." It should be made as needed and promptly served, unless you work at Denny's.

I'll be back in NYC this Friday for the grand opening of our latest store. If anyone wants some free frozen yogurt and wants to meet up I'm down :D. The store is located on 70th and Broadway.

Before August I was a private tutor for high school and college subjects as well as standardized tests. At the beginning of the summer I was offered a job as regional manager for a fairly new (1.5 years old) frozen yogurt chain. I decided to take the position so I could learn the business skills that I lack so that I can one day to finish my own personal dream of running/creating my own school or private tutoring academy. After a month as regional manager the CEO promoted me to a more corporate position as the head of operations for the company. So I recently moved to Philadelphia to manage a small store which allows me to use the ample downtime to work on operations and marketing projects. Right now I am working on a facebook/social media contest to help promote our page (marketing aspect). I also create the standards for employee/manager responsibilities, conduct the majority of the manager/employee training, and do much of the hiring/firing.

It's definitely not what I want to do for my career but I've already learned a ton about business management that I hope to apply when I open my own business down the road.

Very, very interesting.

I actually have thought about what that would be like - running a private academy that offers good, substantial education, or some other small business. It's great you made headway with your aims. Good luck!

I won't lie that I'm not jealous or upset that I'm stuck in first gear (loser).

Meanwhile, having decided to take out the loan to go for an MA in accounting, my parents, with all their typical helpfulness and supportiveness, sent me an email this morning. Subject: "Decision". In it they said that they thought the MA (which was their idea and has been the object of my efforts for the last nine months) was a bad idea and I should instead take my BA and become a public servant here in Boston, and they refused to support any other option. Some decision.

But I am going forward. This time I intend to do things differently. I won't lie that one thing I will take from you is the need to have personal initiative, make connections and have multiple pots on the stove. My parents never understood those things either so I have been having to learn them for myself.

Thanks for the well wishes. I have experience in the public school system and while I definitely have respect for the teachers that work in it and think a strong public education system is essential to a strong country I was not good at adapting to the huge amount of red tape and politics that come into play. It was very frustrating when I spoke with one of my advisors in college about my desire to create an accelerated/gifted option within the class I was teaching when she told me that this was not an option due to some BS about excluding students etc. The school was urban and filled primarily with lower class teens. While there were some bad apples there were also some who I could definitely see succeeding if someone took interest in them. I wanted to be that person but when she said I couldn't do it as my action research project I was pretty disgusted.

I hope you are able to pursue accounting if that is what interests you. I unfortunately am not able to relate well to your specific situation because while my family situation is in many ways quite fucked up my parents have always been willing to support me as long as my goals had some sort of purpose. In the end a lot of it is about becoming a "doer," give it everything you have and hope for the best and if it doesn't turn out perfectly that's life. If you have a "end-game" in mind then try to pick things that will help you achieve that final goal.

To anyone else. I'm serious about the free yogurt. We have vegan, gluten-free, lactose-free, sugar-free flavors if that is holding you back and it's free yogurt for the entire day on Friday :D. I think we are having a marketing team that is going to come and take photos and set up some little contests etc. that should be fun as well.

Friday night my friend asked me to take him to KTV in NYC but I've lately become pretty disillusioned with those venues. I might go just because he really wants to experience it but meh.

Let me know and I can PM you my phone number. I probably will want to get dinner or something afterwards as well if you are up for it.

I'll let you know as the week progresses. I usually have lunch plans but no dinner plans, so I'll probably be free.

Everything would be made to order in a perfect world. The fact of the matter is making a finneckey, high time, slow selling sauce to order in the middle of a rush is beyond retarded and would get you so deep in the weeds you'd be deepthroating dandelions.

Even if it was made to order, you're still looking at a raw egg product that's sitting at room temperature (or slightly warmer) for what could be a prolonged time, depending on how busy/scatterbrained/lazy your server/expo is. Make it at home all you want, but that shit's a breeding ground for bacteria.
