Priest MC is a possess mechanic - the priest controls the target directly, and can move and melee freely, but cannot act while channeling, nor use any of the target's abilities.
Engineer MC turns the target into an AI-controlled pet: the engineer can act as normal while the MC is in effect on the target, and receives a pet bar with only the basic pet options - the player has no direct control over the implementation of attack/defend/passive behaviors. The AI will use spells and abilities according to its usual programming: for example, an eng MC'd paladin will sometimes BoP an allied target, and it can and will do so even if Forbearance is up - in fact, I once MC'd a belf pally and got BoP'd while bubbled.
I have, in fact, several times MC'd priests then lol'd as they immediately pop Divine Hymn. Since the engineering MC causes the target to follow the player like any minion, and breaks on distance or broken pathing, it's very difficult (but possible) to use it hurl players off cliffs. I find it much more effective to use the "stay" command, then chuck an Arcane Bomb at them towards the end of the duration such that the MC expires just as it goes off - and they are immediately silenced for five seconds.
On that note, I'm wondering if engineers will get the improved Cataclysm pet bar in 4.0 and will be able to directly control MC'd target mobility.
I think it's funny the way it is and hope it doesn't change at all.
