So this quarter of school, my theory class and a good chunk of lab time will be spent studying/working in the Garde Manger station. So, after today's lecture on Choux and Profiteroles, I decided to go home and make some.

'Blue Cheese mousse in petit choux; garnished w/slivered almonds, cucumber julienne and a dash of smoked paprika'

I really enjoyed the different take on preparing food (it's really delicate, slow work, totally different than the frenetic rush of a restaurant line) and it was fun just messing around with garnishes and flavors to complement the mousse.

So, FUBU, what do you like to cook/eat?

I made some Maque Choux and some Blackened Chicken a couple days ago and I've been munching on that for a while.

Oh god.
There are several ridiculous cooks in HS.
They always post pictures of stuff they make and it makes me super jealous.
The extent of my cooking knowledge is limited to say the least.

I think we have two culinary school attendees in the guild.
Though it will make this year's HeroCon (guild meetup at my house) all that much better when I make them cook me food.

That sounds really good tbh, braised veggies are generally A+.

Going to make some Mozzarella tomorrow, I'm pretty excited to mess with that process.
