So this quarter of school, my theory class and a good chunk of lab time will be spent studying/working in the
Garde Manger station. So, after today's lecture on Choux and Profiteroles, I decided to go home and make some.
'Blue Cheese mousse in petit choux; garnished w/slivered almonds, cucumber julienne and a dash of smoked paprika'
I really enjoyed the different take on preparing food (it's really delicate, slow work, totally different than the frenetic rush of a restaurant line) and it was fun just messing around with garnishes and flavors to complement the mousse.
So, FUBU, what do you like to cook/eat?
